Creamy Cheesy Tortellini


So I came home from work and thought - ok - time for another boring meal when I just throw some pasta in a pot, sauce right out of the jar straight onto the pasta - and put it on the table.  Sigh - such is the life of a full time working mom with three little ones...right....Cause why lie - typically that is all the food I have in my house. (If I have that)

So as I was going into the freezer - to grab my frozen tortellini, I found some frozen soup.  Sara and Kate over at Our Best Bites have the most amazing Creamy Tomato Soup!  I made if for my SIL baby shower, had left overs so I froze it.  So my brain got spinning - and I am so glad I found it!!!!  The meal was SO yummy!


Creamy Cheesy Tortellini
Package of Frozen Tortellini
1 1/2 cups of Creamy Tomato Soup
1/2 Onion
1 TBS Garlic
1 can mushrooms (I would have used fresh - didn't have any - go figure)
Approx 3 TBS Goat Cheese
Approx 3 TBS Feta Cheese
Approx 3 TBS Parmesan Cheese
Approx 3 TBS Romano Cheese
Salt

Cook Tortellini according to direction.
While pasta is cooking, saute your onion and garlic in either olive oil or butter.
Once slightly browned, add mushrooms or other veggies of choice
Drain pasta
Add pasta to pan with veggies
Add creamy tomato soup (if frozen - thaw first)
Add a handful of goat cheese
Handful of feta
Add Parmesan and Romano cheese as desired

Seriously good to the last bite!

Breakfast for dinner

Ahh - my favorite thing is Breakfast for dinner.  We do it a few times a week...yeah - that's just how we roll.

We had egg/omelet style meal this time.

So for me - I love veggies.  I got a little bit of everything!

 Heat up some oil in a pan.
 Then start chopping some veggies. I had some leftover Broccoli.

Then I had some tomato's, onions, mushrooms, green peppers, broccoli.

Head it all up in the oil - get them nice and tender.


I love bacon....

Crack some egg's and scrambel them up.

OK - here is my fail.  I wanted to make an omelet. So I had a hot pan, oil, put the eggs in - made sure they were done enough. before I added the veggies to flip.

So - for my hubby - I added pepper jack cheese for him.

Bacon is almost done.

Add the veggies ( that were already cooked before)

And - it turns out more like scrambled eggs with veggies.  But - still yummy all the same - and packed with vegetables. 

For mine I added goat cheese - I am in love with that stuff!

My poor attempt at "flipping" an omelet.

Again - didn't turn out how I wanted.

But - piles high of veggies!

Served with a side of bacon and English Muffin.  I couldn't eat the whole thing - but man was it good.  And the kids enjoyed them too.

Chocolate Stuffed French Toast

Do you like Chocolate?  This was kind of my kids creation too!  Chocolate Stuffed French Toast.  Yummy.  Well - 2 of the 5 of us ended up liking it.

First I took a block of cream cheese and softened it.
 Then I added some powdered sugar and Vanilla - how much - ummmm - how much does it look like...I'd say about 2 tsp of Vanilla and 1/4 cup of powdered sugar.
 Then I added some cocoa powder.  I'd say a little less than 1/4 of a cup.
 Beat it up - look at that chocolaty goodness!
 Then - in a separate bowl - beat an egg.
 Add some cream - I don't know measurement - I hope "some" is good enough.
 Sprinkle some Cinnamon (can you tell I don't measure)
 Get your stack of bread, we use a lot.
 Dip one side in the egg mixture (not both)
 I did this two different ways - I put it on the panini maker - yes - again with my panini maker. 
 Then spread the mixture on it.  (I also put the mixture on before I put it on the maker - that worked a little better).
 Per my oldest direction - she wanted chocolate chips in the center too - who am I to argue with that!
 Put the other side on - 1/2 dipped in the egg mixture - with the egg mixture hitting the hot parts of the panini press.  If you notice - I used the regular skillet side - not the panini press side - I didn't want the lines on it - and it worked pretty good.
 Here they are all lined up.

 Then I closed the press - this way I don't have to worry about flipping them.
 Put a little chocolate syrup on it - with a little whip cream (again my daughters suggestion) and you are ready to dig in!



 My middle child wanted sprinkles - so she got sprinkles.

 I am not a big whip cream person - so I just used regular syrup.  It worked for me.
 My little man was one of the ones that liked it.  I think he liked the mess it caused!
 Then my oldest decided to help clean him up - she actually did a pretty good job!
 It was super super super chocolatly!  With that being said - it seems to be more of an adult taste with the cream cheese.  My husband doesn't like cream cheese - so he didn't like it too much.  And even though it was oozing with chocolate - I think it was a little to sophisticaed for my girls.  We ended up making plain french toast for them.  I did however like it - it was REALLy rich.  I mean rich!!!  A nice tall glass of milk - and this ooey gooey chocolatey meal - would go perfect!

Super Bowl Desserts

Ahhh Cake Pops - my new favorite food!!!
First - you have to get your ingredients, set your oven
Stir all your ingredients - get a wonderful helper :-)
Then put them into the shape you want them to. Mine - football shapes.


After they were refrigerated and then dipped in chocolate.
Oh then I made cupcakes - my daughter, dad and sister in law had to blow out candles for their birthday, and you can't do that in a cake pop. So. I made the giant cupcakes, regular and mini.


I wanted to decorate them cute - so I made little chocolate footballs. I went to my cricut (love that thing), went to my sports cartridge, and used the pens to fill the page with footballs. Covered it up with the press and seal stuff.








Then - to make the chocolate - take the wafers, put them in a ziploc bag - put it in the microwave at like :30 sec bursts, till it's soft - cut the tip of a corner.
Then trace the outside with chocolate, then fill it in, move onto the next.
Here are all my footballs.
Same technique I did with the chocolate - I did with white chocolate - and did the laces. Put the white in a baggie - nuke it - make some laces.

On to my huge cupcakes. Bake them as usual. Then time to tint the frosting. I used 2 cans of frosting (one at a time though to color). Then I used about 12 drops of green, 2 of yellow.

I found an awesome way to fill the bag - without making your hands a mess. Put the bag in a tall glass, fold the top on the outside. Then fill it up.


Now - go around the outside - and make small bursts, and work the way around.
Then put the football into the cupcakes.


Then I wanted to do the yard markers.
